My grandmother, who left behind a legacy of love and a passion for food is always with me! One of my grandmother’s favorite soups was her Caldo Azedo, also called Sopa Azedo or Portuguese Sour Soup. This amazing soup is absolutely delicious and just as fun to eat. My grandmother and I would literally break bread together and place our chunks of bread in the bottom of the bowl. My grandmother was never one to waste food so this recipe came in handy when she had stale bread. I’d watch as my Vavo would lovingly pour her soup over the accepting bread and it would soak up the broth…then it was time to dig in! This soup will warm your belly and dance in your mouth!

In Portugal soups are often the main meal and this was no exception in my grandmother’s home. This hearty soup is the perfect meal on cold evening.

1 lb. dry red beans, soaked overnight
1 onion, chopped
8 oz. can tomato sauce
Salt and Pepper to taste
2 garlic cloves, minced
½ stick butter
2 sweet potatoes, cubed
2 white potatoes, cubed
2 tbsp. white vinegar
Crusty Bread like Portuguese or French bread

Clean beans well. Soak your kidney beans overnight in large pan. Cook in the same liquid. Add onion, garlic, tomato sauce, salt and pepper. Bring to boil, lower heat, and let simmer for one hour until beans are almost done. Add potatoes and simmer. Add half a stick of butter and 2 tbsp. white vinegar. Stir until butter melts. Serve over torn bread in a bowl.
