• 1 cup unbleached all-purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon garlic powder
  • 1 teaspoon aluminum-free baking powder
  • 2 large eggs, beaten
  • 1 cup 2 % milk
  • 1/3 cup butter (5 1/3 tablespoons), melted
  • 1 (10 ounce) package chopped spinach, rinsed and squeezed
  • 1 red or yellow onion, minced
  • 1 (8 ounce) package shredded mozzarella cheese

These scrumptious squares can be served any time of the day. You can experiment with different cheeses. This quiche can be made days ahead and kept in the refrigerator. I think its best when served at room temperature.

Preheat oven to 375 degrees. Lightly grease a 9 x 13-inch baking dish.

In a large bowl mix together the flour, salt, garlic powder and baking powder. In a medium bowl, whisk together eggs, milk and butter. Stir in spinach, onion and mozzarella cheese. Add wet mixture to dry ingredients and mix just until combined. Transfer the mixture to a greased 9 x 13-inch baking dish. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Cool before serving. Cut into pieces.

Tip: Frozen spinach is much less expensive than fresh. Big bang for your buck!
