My friend, Joanna in Asheville, North Carolina, gave me the original recipe for these cookies! We used to have a lot of Bake Sales in our neighborhood of Biltmore Lake and Jo would bake these cookies! Everyone loved them!

These are the cookies I made for the first Random Acts of Kindness Campaign video! Everyone just loved them! Filled with fiber, nuts, coconut and oats, these cookies are so flavorful and nice and crispy! Pass them on and post your videos on facebook and you tube! Perhaps you can think of another random act of kindness as well! Let’s keep it going!

Makes 48 cookies

1 cup light brown sugar
1 cup walnut oil (you can also use vegetable or canola)
1 cup granulated sugar
1 cup softened butter
1 cup Fiber One Honey Clusters cereal
1 egg
1 cup walnuts, chopped
1 cup rolled or old-fashioned oats
3 1/2 cups King Arthur unbleached flour
1 tsp. cream of tartar
1 tsp. kosher salt
1 teaspoon baking soda
1 cup shaved coconut
1/2 bag butterscotch chips
1/2 bag Ghiradelli white chocolate chips

Combine all ingredients refrigerate for one hour. Roll into balls and bake in a 350 degree oven for 10 minutes until a little crisp. I always take my cookies out a minute before they are completely bake because cookies will continue to harden as they sit.
