Many are heading back to school, beginning another year of homeschooling, or if you’re like me, starting your first week as an empty-nester. One of the things we have in common is the need for quick and delicious breakfasts. My husband Mike is still expecting my delicious food although the boys are now in college and I wouldn’t have it any other way!

Here are some breakfasts you can make in a jiffy, can be frozen or prepared the night before:

French Toast

Breakfast tips for busy families:

1. Set the table the night before.
2. Make muffins, scones, waffles and breads that can be made in advance (like on the weekends) and frozen.
3. Make the pancake batter the night before.
4. Turn French Toast into a French Toast Casserole by soaking in a a 9 x 13-inch baking pan in the refrigerator and baking the next morning.
5. A simple breakfast eggs and a piece of whole wheat tast with a slcie of fruit would be a great start to the day.
