One of our family and friends favorite meals, you’re family will be asking for more, too! We always serve these very flavorful chops with either Garlic Mashed Potatoes or Roasted Red Potatoes and Roasted Broccoli!

Tuscan Pork Chops

¼ c. all-purpose flour
1 tsp. salt (I like to use Slap Ya Mama)
¾ tsp. ground black pepper
4-1 inch pork chops, bone in
1 tbsp. olive oil
4 cloves garlic, minced
2/3 c. balsamic vinegar
2/3 c. low-sodium chicken broth
3 plum tomatoes, seeded and diced

Dredge pork chops in seasoned flour mixture (flour, salt and pepper). Brown pork chops in oil. Remove from pan and add garlic. Stir and add the tomatoes and chicken broth and balsamic vinegar. Deglaze the pan getting all the tasty bits from the bottom; this is where all of the flavor is. Invite your chops back to the party and let the festivities begin! Wait until you smell this dish, and by golly, wait until you taste it! Bake covered for 45 minutes in a 350 degree oven or until tender. Absolutely delicious served with Garlic Mashed Potatoes.

(In the margin: No time to bake—no problem! I decrease the cooking time by simply covering the chops and simmering for about 20 minutes; obviously thinner and boneless cuts take less time)
