• 1 cup softened butter
  • ½ cup sifted powdered sugar
  • 2 cup all-purpose flour
  • 4 beaten eggs
  • 1.5 cup granulated sugar
  • 2 teaspoon finely shredded lemon zest
  • 1/3 cup fresh lemon juice
  • ¼ cup King Arthur unbleached all-purpose flour
  • ½ tseaspoon baking powder
  • Sifted powdered sugar

When life gives you lemons, make Lemon Squares! Lemon is one of our family’s favorite flavors and this recipe, with it’s shortbread crust and lemon curd filling, is a family favorite! Gather your family in the kitchen or surprise them with this treat today!

Beat butter for 1 minute. Add powdered sugar on low; watch out for powder dust…smile… until combined. Beat in the 2 cups of flour until crumbly. Press mixture in the bottom of an ungreased 9 x 13-inch baking pan. Bake in a 350-degree oven for 20 to 25 minutes.

Meanwhile, beat together eggs, granulated sugar, and lemon juice. Combine ¼ c. flour and the baking powder; stir into the egg mixture along with the lemon zest. Pour over baked crust.

Bake in a 350 degree oven for 25 minutes or until lightly browned and edges appear set. Cool on a wire rack. Sprinkle with additional powdered sugar and cut into squares. Store, covered into the refrigerator.
