• Multigrain Pizza Dough
  • 1 tbsp. baking yeast
  • 1 tsp. granulated sugar
  • 1 c. very warm water (105*-115*)
  • ½ c. whole-wheat flour
  • 1/4 c. whole flax seed meal
  • 1 tsp. olive oil
  • 1 tsp. salt
  • 2 c. unbleached white bread flour, plus a little more for kneading
  • 3/4 cup Hunts Traditional Sauce
  • 2 BelGioioso Fresh Mozzarella balls, grated
  • 1/3 cup freshly grated Parmesan cheese
  • 1 large chicken breast, cooked (seasoned with salt and pepper)
  • 1 cup fresh spinach
  • 5 cloves garlic, rough chopped
  • 1/2 cup feta cheese

My dear neighbor, Karlie, made us a wonderful dinner the other night. I had one breast of chicken left and my hubby and son were craving our Multigrain Pizzas, so I decided to make a Greek Pizza using the leftover chicken! I must admit that we ate way too much – it was THAT GOOD!


Combine yeast, sugar and water in large mixing bowl and set aside until foamy, about five minutes.

In a large bowl, combine flours, flax seed meal and salt. Stir together. Add yeast mixture and olive oil. Mix until incorporated. Turn onto floured surface and knead for 5-7 minutes until smooth and elastic, adding the remaining flour as needed. (This is why I only add 1.5 c. of flour before kneading. I set aside ½ c. of flour to use as I knead the dough. Sometimes you don’t even need ½ c. of flour.)

Lightly oil or spray large bowl. Place the dough in the bowl covering both sides with oil or spray. Allow dough to rise and double in size. Once doubled, you may make your pizza.

Preheat your oven to 450 degrees. Place your dough onto a greased baking stone or baking sheet. Using your hands push the dough out to the edge of the pan.

Spread tomato sauce over your crust. Grate your fresh mozzarella balls and Parmesan cheese over top. Add chicken, spinach, garlic and feta cheese.

Bake for 15-20 minutes moving from top rack to bottom until the bottom of the crust is crispy. Get ready for a delicious pizza!

TIP: I also use the leftover chicken from my Greek Salad recipe which has chicken that has been marinating in olive oil, lemon juice and oregano!
