• 1/4 cup olive oil, divided
  • 1 yellow onion, sliced
  • 1 red onion, sliced
  • 1/2 teaspoon granulated sugar
  • 4 boneless chicken breasts, trimmed of any fat or skin
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 cup Pacific Organic Chicken Broth
  • 2 tablespoons all-purpose flour
  • 1/2 cup pacific organic chicken broth
  • 1/2 cup Swiss cheese, grated

So delicious. So comforting. Done in thirty.

For a quick Sunday Supper made in thirty minutes, we enjoyed chicken breasts smothered with caramelized onions and the Swiss cheese left over from my time in the kitchen with NC Secretary of State, Elaine Marshall. Once simmered, the chicken broth made a flavorful and easy gravy. A comforting meal not only on Sunday, this easy meal would be a great go-to on a busy weeknight, too!

Heat two tablespoons of olive oil in a skillet over medium heat. Add sliced onions and sugar. The granulated sugar will help the onions caramelize quicker.  Stir until onions are nicely browned. Remove onions onto a plate and set aside. You can also check out How to Caramelize Onions.

Add the rest of the olive oil in the hot pan and place chicken breasts in the skillet. Add salt and pepper on top of your chicken. The flavor from the caramelized onions will help flavor your chicken, too. Resist turning the chicken until it has nicely browned. If you turn the chicken over too early the chicken will stick to the pan and tear. This is not pleasant. Who really wants torn chicken? Not you!

Once both sides of the chicken have browned add 1 cup of chicken broth. Lower the heat, cover and simmer for 20 minutes.

To thicken your chicken broth, combine 1/2 cup chicken broth (room temperature or cold) to 2 tablespoons of flour. Never add flour to hot liquid.  Add this mixture to the hot pan and stir to make a gravy.

Sprinkle half of the caramelized onions over the chicken, then half of the Swiss cheese and repeat with a second layer of each. Cover for two minutes until cheese melts.
