Don’t these look terrific? They taste even better! My dear friend, Anne Ciraulo, originally shared this wonderful recipe with me years ago. Anne taught our boys piano for many years. Every Christmas Anne would spoil the children and their families by organizing a Christmas Piano Recital complete with a table of goodies, hor dourves and snacks!

I’ve been making these cookies every year for Christmas for about ten years! Our oldest son Nathaniel enjoyed our dear feind adn piano teacher Anne’s recitals so much that he would organize two recitals a year for his students; one in the spring (usually an ice cream social and one at Christmastime). Wrapped in a box and decorated with ribbon, these cookies make the perfect gift for any peanut butter chocolate lover! They make a bunch, too! Everyone loves them! I alwasy separate the layers with waxed paper. This is a wonderful recipe because it not only tastes amazing, but can be made in advance.

Makes 4 dozen cookies

½ c. butter, softened
½ c. peanut butter
½ c. granulated sugar
½ c. packed brown sugar
1 egg
½ tsp. vanilla extract
1.5 c. King Arthur unbleached all-purpose flour
¾ tsp. baking soda
48 Reeses Mini Peanut Cups
½ tsp. kosher salt

Preheat your oven to 375 degree F oven.

Cream together first 4 ingredients. Beat in egg and vanilla. Mix dry ingredients together and add to wet ingredients. Mix well. Shape into 1-inch balls and place in mini muffin baking pan.

Cook 6-8 minutes. Remove from oven. Immediately place a mini Reese’s Cup inside and let cool in pan for 10 minutes until chocolate hardens again.
