• 1/2 cup olive oil
  • 2 lbs Sweet Italian Sausage with Broccoli Rabe (found at BJ's in the meat department) you can also choose spicy sausage or your favorite Italian turkey sausage
  • 3 red bell peppers, sliced
  • 3 green bell peppers, sliced
  • 4 red onions, sliced
  • 1 (6-ounce) can tomato paste
  • 1 cup Marsala wine (adds a nice sweetness) or your favorite white wine
  • 1 (14.5 ounce) can diced tomatoes
  • 2 tablespoons Garden Gourmet Garlic or 6 cloves garlic, minced
  • 2 teaspoons kosher salt
  • 2 teaspoons dried oregano
  • 3 tablespoons Garden Gourmet Basil
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh red crushed pepper (Pimento Moida) or 1/2 teaspoon red crushed pepper flakes
  • 10 to 12 fresh rolls of your choice

Fed a large crowd for my son Nate’s 22nd birthday. One of the recipes I made in honor of Nate’s special day was Sausage and Peppers. I recently made Chicken Marsala and some Marsala wine left. Spicy Sausage and Peppers meet sweet and cool Marsala wine. What a perfect combination! Everyone loved it and I’m glad to share this recipe with you. Try this recipe for your next gathering, if you’re in need of a crowd-pleasin’ recipe, or if you just want to make a large amount of something fantastic and then portion out the rest to freeze for other meals later on.

Heat oil in a large family skillet. Brown sausages on all sides and set aside.  Add peppers, onions and garlic. Saute until almost tender. Add tomato paste, Marsala wine, diced tomatoes, garlic, salt, oregano, basil, thyme and red crushed pepper. Cook for about five minutes and add sausages back to the pan. Reduce the heat and let simmer for about 20 to 30 minutes, stirring occasionally. Serve in your favorite rolls.
