My sister is a great baker and she loves experimenting! She makes these Peanut Butter Balls every year and let me tell you…we look forward to them…they are wonderful! She gave me this recipe years ago. Easy to make with your children, it is the perfect recipe for an afternoon of fun! WARNING: Hard to eat only one! : – )
½ cup softened butter
2 cup cornflakes, broken up a little
2 cup Smart Balance creamy peanut butter
2 cup powdered dry milk
2 cup powdered sugar
15-oz. semi-sweet or milk chocolate chips
Combine first five ingredients and mix well by hand. Roll into i-inch balls. Place on a baking sheet lined with wax paper. Chill overnight in the freezer for an hour or two. When they have hardened, dip them in melted chocolate…oh yeah! Place back on waxed paper, chill to let harden again. Place in pretty muffin tins and store in an airtight container…makes a great gift and can be made well in advance!
