• 2 pounds skinless cod fillets
  • Salt
  • Old Bay seasoning
  • 1 sleeve of Ritz crackers (about 34 crackers)
  • 5 Tbsp salted butter
  • Lemon slice per person

I’m feeling nostalgic this evening. I love the holidays but sometimes I miss my family. I thought Baked Cod with Ritz Cracker Crumb Topping would bring us right back to Massachusetts. This recipe can be found in just about every restaurant and family table in New England. One of my favorite dishes my dad makes is baked bay scallops in pretty dishes with this cracker crumb topping. It’s delicious! The trick is to eat it as soon as it comes out of the oven and squeeze fresh lemon juice over the top. Of course in New England we always serve this dish with rice pilaf!

 

Preheat the oven to 350°F. Grease a baking pan with a little butter. Use a paper towel to pat dry your fish. Use long nose pliers to remove any pin bones from the fillets. Cut the fillets into large serving pieces. Place the cod fillets in the bottom of your pan and sprinkle with a little kosher salt and Old Bay seasoning.

Melt your butter. Crush the Ritz crackers over a bowl; they should look like coarse breadcrumbs. Mix in melted butter. Pack the crumb mixture over the top and sides of the fish fillets.

Bake for 20 minutes, or until the fish flakes easily. (Thin fillets may take less time, very thick fillets may take longer.)

Serve the fish with lemon slices.
