This morning I surprised my guys with a warm batch of Buttermilk Spice Muffins. It is very important to use freshly grated nutmeg-it makes a tremendous difference!
1 cup granulated sugar
3 eggs
3/4 cup buttermilk
1/2 cup butter
2 1/2 cups King Arthur unbleached flour
2 teaspoons baking soda
1 teaspoon freshly grated nutmeg
1/2 teaspoon ground cinnamon, plus 2 teaspoons of sugar adn 1 teaspoon ground cinnamon
Preheat your oven to 375F. Melt your butter. In a mixing bowl combine sugar, eggs and buttermilk. Slowly add the melted butter to temper the eggs and mix well. Add all dry ingredients and fold together just until combined.; it is important to avoid over-mixing your muffin batter. Combine 2 teaspoons of granulated sugar and 1 teaspoon of ground cinnamon and sprinkle over muffins. bake for 12 to 15 minutes or until a toothpick inserted in the middle comes out clean. Enjoy!
