- 3 eggs, beaten
- 3 tbsp. toasted sesame oil
- 2 boneless chicken breasts, cut into small pieces
- 1 yellow onion, chopped
- 2 tbsp. and 1/4 c. low-sodium soy sauce
- 4 c. cooked white rice, room temp or cold
- 2 tbsp. toasted sesame seeds
- 1 c. frozen peas, optional

2 tbsp. and 1/4 c. low-sodium soy sauce
4 c. cooked white rice, room temp or cold
2 tbsp. toasted sesame seeds
1 c. frozen peas, optional
Add sesame oil to a wok or large pan over high heat. Cook beatened eggs; remove. Cook chicken until done, add onion, cook for one minute. Add soy sauce. Add rice and toasted sesame seeds. Cook a few more minutes. Add additional 1/4 c. soy sauce. Continue to stir constantly. Add peas and cooked egg and remove from heat.
