The Cooks for Books event was a blast and NBC 17 and I won! I served this coleslaw which I named after “Claude” from Mike Artell’s Three Little Cajun Pigs children’s book with my signature dish Chicken and Sausage Gumbo! The very talented author generously signed a book that was later dedicated it to all of the children who will benefit from the literacy program provided by the Garner Education Foundation! What a great night! Thanks so my friend, Sharon Delaney, for helping out!
1 head of green cabbage, very thinly sliced
1 red cabbage, very thinly sliced
1 yellow bell pepper, diced
1/2 Vidalia onion, grated
1/2 cup good dry sherry vinegar
1/4 cup canola oil
1/2 teaspoon Slap Ya Mama seasoning
Zest and juice of one lime
Ina large bowl combine green and red cabbage and yellow bell pepper. Grate half a Vidalia onion into a bowl. Add dry sherry vinegar, oil, Slap Ya Mama and the zest and juice of a lime. Refrigerate until ready to serve. Enjoy!
