• 2 tablespoons butter
  • 1/2 yellow onion, diced
  • 1 garlic clove, minced
  • 2 tablespoons flour
  • 1 1/2 pounds frozen corn
  • 1 cup heavy or whipping cream
  • 1/2 teaspoon freshly ground nutmeg
  • 1 teaspoon kosher or sea salt or to taste
  • ½ teaspoon freshly ground black pepper
  • Garnish with freshly chopped parsley

Every family has their holiday favorites and if you’re like us, you have many! For Thanksgiving I enjoy making my mother and grandmother’s recipe for Portuguese Style Turkey. We also love Mashed Potatoes, roasted sweet potatoes, chourico, my grandmother’s stuffing, which is a family favorite, and roasted veggies. I like to add a new side each year and a new dessert. Having not made creamed corn before, I took a shot at it this weekend. The hubby gave it two thumb’s up which means it passed the “Is it worthy for our Thanksgiving table test?”

We’ll certainly be making this more than one time a year –it’s so good!

In a saute pan melt butter and add diced onion. Saute for two to three minutes until onion is translucent. Do not brown the onion. Add garlic and cook one minute.

Add flour and cook for one minute to remove the flour taste.

Add your corn and cream. Season with salt and pepper and freshly ground nutmeg.

Cook just until cream thickens a bit; this will continue to set up as it sits so having the cream a little loose is a good idea. Garnish with freshly chopped parsley, chives or scallions and enjoy!
