My son, Alexander, turns eighteen today. Eighteen, who would have thought? Time sure flies by when you’re having fun. Our homeschooling days are almost at an end, and watching my boys grow up to be such fine young men, has been such a privilege!
Alex requests my Cheesecake every year. This year he will be surprised by the addition to his birthday menu. I am adding something special to the table. Alexander LOVES eggnog and will be surprised when he sees these Eggnog Cookies on the table.
Yesterday as I prepared for his big day, the guests it will bring, and the fun we will have, Alex said, “One of the ways my Mom shows us her love is through her food. Mom, I really appreciate you!” What a kid!
Eggnog Cookies
1 1/4 cups granulated sugar
3/4 cup butter, softened
1/2 cup eggnog
1 teaspoon pure vanilla extract
2 egg yolks
2 1/2 cups King Arthur unbleached all purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 tsp. ground cloves
1/2 tsp. ground nutmeg
1/2 tsp. kosher salt
Preheat oven to 300 degrees F.
Combine flour, baking powder, cinnamon, cloves and salt.
Cream sugar and butter until light. Add eggnog, vanilla, and egg yolks and beat at medium speed with mixer until smooth.
Add dry ingredients and beat at low speed just until combined. Do not over mix.
Drop by teaspoonfuls onto ungreased cookie sheet 1-inch apart. Sprinkle lightly with freshly ground nutmeg. Bake 20 to 23 minutes until bottoms turn light brown. Enjoy!
