I first saw this recipe in the 2003 October/November edition of Taste of Home. I’ve made it every Christmas since then! The aromas that emanate from the oven when baking this cake are almost indescribable! A dollop of homemade whipped cream with the sprinkling of some candied ginger is absolutely delicious! Serve with a nice hot cup of tea and you’ve got yourself a terrific evening snack or afternoon treat!
1-2/3 cups King Arthur unbleached all-purpose flour
1/3 cup granulated sugar
1-1/2 teaspoons baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 cup orange juice
1/2 cup molasses
1/3 cup canola or vegetable oil
1 egg
1/2 cup orange marmalade
Whipped Cream and candied ginger for garnish
In a bowl, combine the flour, sugar, baking soda, ginger, cinnamon, and cloves. in a separate bowl, combine orange juice, molasses, oil and egg; add to dry ingredients and stir until just combined. Pour into a greased 9 inch or 8 inch round baking pan.
Bake in a 350F oven for about 15-20 minutes. Once a toothpick inserted into teh center comes out clean, you’re cake is done! Spoon over marmalade and spread. Cool on a wire rack adn serve with a dollop of homemade whipped cream and some candied ginger.
