My Mom’s Portuguese Chourico Sandwiches
Our family enjoys our time together on our long trips back to Massachusetts. We enjoy playing travel games, talking, reading, listening to books on tape and stopping at our favorite restaurant for lunch. The anticipation of being with our family helps make the trip go by so fast! We head back every year. Always waiting by the window anticipating our arrival, my mom greets us with hugs and the comforting smell of these sandwiches! They are one of our favorites! Our arrival is always my favorite part of the visit!
1 stick of salted butter
2 tablespoon garlic, minced
3 shallots, minced or 1 small onion, minced
5 pounds ground Chourico, a Portuguese smoked sausage
4 ouncess tomato paste
1 cup dry white wine
1 teaspoon ground black pepper
1/2 teaspoon white pepper, optional
Cook the ground Chourico, shallots and garlic in butter. Add tomato paste, wine and spices. Cook until wine has evaporated. My mother always serves this in soft, small finger rolls or Portuguese rolls.
We always get our Chourico from the Acoreana Chourico Manufacturing company or Mello’s Manufacturing Company in Fall River, Massachusetts. You can order by phone and they will vacuum pack it and ship to you. It can be at your home in just a couple of days! Oh, the flavor; you’ll just kiss me! ; )
