- 1 package Simply Potatoes Shredded Garlic and Herb Hash Browns
- 3 tablespoons butter, melted
- 1/2 lb. ground Portuguese chourico
- 1/2 green bell pepper, sliced
- 3 large eggs
- 1 cup half and half
My youngest son Alex has to work during lunch today and so a substantial breakfast was in order. My sons Nate and Alex and Nate’s girlfriend made breakfast last week. Nate bought 2 bags of hash browns. The potatoes were flavored with garlic and herbs.
This morning, when thinking of what to make, I had leftover ground chourico and a half of red pepper. On the back of the hash brown bag was a recipe for an “Italian Quiche” using the has browns as a crust. that was it! I would make a Portuguese Quiche and boy was it easy and Delicious!
Here’s how I made it:
1. Preheat your oven to 425 degrees F. Spray a 9-inch cast iron pan or a glass baking dish with non-stick cooking spray.
2. In a medium sized bowl, combine has browns and melted butter. Simply press the potato mixture on the bottom and the sides of your pan to form a crust. Bake for 25 minutes.
3. In a saute pan, cook your ground chourico, which I order form Mello’s Manufacturing Company. An insulated cooler filled with ice packs comes right to my door.
4. In a medium bowl whisk togetehr eggs and half and half. Add the ground chourico.
5. Pour over the has brown crust and place the green bell pepper slices over the top.
6. Bake for 20 minutes more.
Because I have a sweet tooth and some ripened bananas, I made my Double Chocolate Banana Bread to go along with our breakfast! I sure hope you will try that recipe too! I know you will enjoy it!
