Hoping everyone had a wonderful Thanksgiving with family and friends!

Some folks enjoy eating one thing at a time on their plates. Not I! I love eating a little bit of this and a little bit of that at the same time, so yesterday as we stored away our leftovers we decided to use some of the leftover Creamed Corn

and Carrot Potato Mash

to make a casserole similar to my Shepherd’s Pie. You can use whatever vegetable you have left, even ham if you cooked a ham instead of a turkey, and then your Mashed Potatoes for the top layer. We stored away the leftover gravy which will be delicious on top of this casserole for dinner tonight!
We were excited to create a whole other meal with the leftovers in just a few minutes.

We are getting ready to put up our Christmas decorations before the guys head back up to Campbell University on Sunday. We are excited to have Amanda returning this afternoon to help us put up our decorations and we have a hearty dinner ready to eat. All we have to do is to bake it up in the oven for about 40 minutes, reheat the gravy, serve on a plate, pour the tomato onion gravy over the top, get a fork ready and DIG IN! Let the Christmas decorating begin! Watch for pictures later on…we can’t wait to share with you! I also have a surprise I can’t wait to share with the kids tonight!

Butter a 9 x 13-inch baking pan and spread one layer of the Creamed Corn or your leftover vegetable(s) on the bottom.

Chop some of your leftover turkey and place on top of the creamed corn

Top off with the lovely Carrot Potato Mash, your favorite recipe for Mashed Potatoes or even a Sweet Potato Mash.

Bake in a 375 degree F oven for about 40 minutes until heated through and a little browned on top. Serve with leftover gravy and enjoy a comforting and very easy meal!
