This afternoon we had a Baby Shower for my trainer and friend, Kathy! I made cupcakes frosted with this Special Whipped Frosting and topped off with animal cracker on…she and her husband are expecting a baby boy the first week of March!

I first enjoyed this frosting over 8 years ago, when my dear friend, Yvette, mother of ten children at the time, was preparing for her first daughter’s wedding. She was making the cake herself (in her spare time of course : – ) and what a gorgeous cake it was! Yvette made all of the brides maids dresses as well! (No, I’m not kidding!) She is a superwoman!!

Because the wedding was to be outdoors, Yvette needed to experiment and find the perfect frosting that would hold up to the heat. Not only did this frosting last for hours, but it was absolutely the BEST whipped frosting I’d ever had…and so…I’ve been making it ever since! Yvette was kind enough to share her recipe with me and now I am passing it on to all of you!

4 sticks of salted butter, softened
3 3/4 c. powdered sugar
2 1/2 c. plus 2 tbsp. whipping cream
1 tsp. pure vanilla extract

Use a Kitchen Aid (or other heavy duty mixer) and the paddle attachment:

Cream the butter and sugar for two minutes. Scrape down bowl and mix additional two minutes until light and fluffy.
Reduce to medium speed and gradually beat in 1 c. cream. Continue beating for 1 minute.

Mix 1 tbsp. vanilla into 1 c. cream. Gradually beat in to frosting.

Increase mixer to med/high speed for 5 minutes until light and fluffy.

Reduce to medium speed and add remaining 1/2 c. plus 2 tbsp. cream, and beat until very fluffy for 15 minutes.
