My husband, Mike, and my youngest son, Alex, are not fans of clams like my oldest son, Nate, and I are, so we created this recipe, a version of my father’s Incredible Clam Cakes! Nate and I enjoy the Clam Cakes and Mike and Alex love the Corn Fritters…it works!

2 c. King Arthur unbleached all-purpose flour
2 tbsp. Rumford aluminum-free baking powder
2 tsp. kosher salt
2 tsp. onion powder
1/4 c. onion, minced, optional
1 (14.5 oz) can corn and the juice
1/4 c. water or so

In a large bowl combine flour, baking powder and salt. Add corn, baking powder, salt, onion powder and minced onion (optional). Stir until just combined. If too thick, add a little water.

Heat a pan to med/hi heat and carefully drop spoonfuls of batter into your heated oil. Turn your fritters over as soon as one side is browned or you will never get them to turn. Fry until golden brown and done inside about 5 minutes. Enjoy!
