• 1 tablespoon canola oil
  • 3 cloves garlic sliced
  • Large bag of fresh spinach leaves
  • 1/2 teaspoon Slap ya Mama or salt and pepper to taste
  • 1/4 cup Pacific free range chicken broth
  • 2 tablespoons heavy cream
  • Smothered Chicken
  • 4 boneless chicken breast, trimmed of any fat and excess skin, rinsed and dried with a paper towel
  • 2 tablespoons canola oil
  • Salt and Pepper to taste, or Slap ya Mama (my favorite Creole spice)
  • 1 cup Pacific free range chicken stock
  • 1 onion, sliced
  • 4 pieces Monterey Jack sliced cheese

Last night’s dinner was delicious and better yet, it was super easy and quick!  I was happily working on the upcoming fundraiser, Wheels for Samantha,  when I looked up at the clock…6:00 pm!  Phew, time sure flies by when you’re having fun!  Time got away with me and I needed to make dinner… and fast. Has this ever happened to you? My hubby would be home in thirty and I love greeting him with a nice home-cooked meal and a smile…most days!

Fortunately, I did have  boneless chicken breasts thawed out and ready to be cooked. I decided to whip up my Smothered Chicken with Creamed Spinach…delicious and quick…just what I needed.  This meal is appealing to the eye and satisfying to the belly! Sauteed Chicken Breasts smothered with onions and cheese served over Creamed Spinach…how can that be bad? Also a great low-carb meal, I hope this recipe comes in handy one night when you’re pressed for time and in need of a healthy and delicious meal for your family.

 

Creamed Spinach

In a pan heat your oil and saute your garlic slices. Add your spinach, chicken stock and spices. Add your cream and cook only for a a couple of minutes until spinach is wilted.

Smothered Chicken

Heat your skillet and add your oil. Season your chicken breasts liberally. Add chicken to the pan and brown each side for about three minutes. Do not have to cook the chicken all the way through. Pour one cup of chicken broth into the pan. Place sliced onions on top of the chicken and close the lid. Cook ten more minutes then uncover and place one piece of cheese on top of each piece of chicken. Close the cover to melt  he cheese about one minute.  Serve over a bed of Creamed Spinach.
