- 2 cups non-fat Greek yogurt
- 1 medium cucumber, grated with liquid squeezed out
- 2 green onions, chopped
- 1 tablespoon cilantro, chopped
- 1/2 cup fresh mint leaves, chopped
- 1/4 teaspoon ground cumin
- Dash of pepper
- 1 clove garlic, minced
- 1-inch of ginger root, grated
- Zest and juice of one lemon
- ½ teaspoon kosher salt or to taste
- 1/4 teaspoon freshly ground black pepper
Raita, a flavorful cucumber yogurt sauce, is the perfect accompaniment to many spicy dishes. A cool and welcomed contrast to spicy dishes like Shrimp or Chicken Tikka Masala, Raita not only cools your palate, but wakes up your senses.
A simpler recipe there could not be, combine all ingredients and refrigerate.
