Often times the simplest of recipes have the best outcome; this recipe is no exception. My friend Cheri gave me this recipe years ago when we first moved to Asheville, North Carlina and I’ve been sharing it with others ever since!  Passing recipes on is so important. 1 c. salted butter, softened

1 c. granulated sugar

1 egg

1 tsp. pure vanilla extract

2 c. all-purpose unbleached flour

½ tsp. baking soda

In a mixer beat, butter and sugar until beautifully fluffy.  Add the egg and fragrant vanilla extract; mix well. In a small bowl combine flour and baking soda. Add your dry ingredients to the wet and combine well.  Chill your dough for ½ an hour.  Shape into small balls. Place cookies on ungreased cookie sheet.  Bake in a 350 degree oven for 10-15 minutes or until lightly browned.
