- 1 (10 ounce pkg) butterscotch chips
- 1 tablespoon shortening (not butter or oil)
- 1 cup Rice Krispies cereal
- 1 cup Special K with Strawberries
- 3/4 cup cashew halves
- 3/4 cup semi sweet or dark chocolate chips
With a bag of butterscotch chips in my pantry and the big super bowl game this weekend, I decided to create a fun treat easy enough to eat while watching the game. This is a great treat to serve to your family on Valentine’s Day, too!
This was quick.
It was easy.
You can pretty much use any cereal you like.
You can add chocolate chips, white chocolate chips, M & M’s, other nuts, all nuts, etc.
The most fun is creating your own version of this family favorite.
Today I used a mixture of butterscotch with chocolate chips and cereals.
1. In a large bowl melt your butterscotch chips with one tabelspoon of shortening in your microwave or over a double boiler. Do not substitute butter or oil for the shortening. Stir every 30 seconds until the chips have completely melted.
2. Place Special K cereal with strawberries in a plastic bag and crush into smaller pieces.
3. Add both cereals, chocolate chips to the melted butterscotch and stir together.
4. Fill paper muffin cups with large spoonfuls of the mixture for a quick snack or place in a baking dish, press and then cut into squares once they harden.
