- 3 tablespoons salted butter or margarine, plus extra for spoon
- 1 package (10 oz., about 40) regular marshmallows
- - OR -
- 4 cups miniature marshmallows
- 1 teaspoon good vanilla extract
- 1/2 a bag of English toffee bits
- 6 cups Kellogg's® Rice Krispies® cereal
- Non-stick cooking spray
I have Corned Beef and Cabbage bubblin’ away on my stove top. It smells so good in here that Alex and I admittedly ate our dessert first! The smell of the corned beef and cabbage made us hungry! Can you blame us?
That dessert was a blast from the past. Although I used to make the original Rice Krispies Treats when the boys were younger, I thought it would be nice to change it up a bit, and boy, was everyone glad I did!
1. Butter a 13 x 9 x 2-inch pan.
2. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Add good vanilla extract, stir and remove from the heat.
3. Butter your wooden spoon. Add with Add Rice Krispies cereal. Stir until well coated.
4. Using the buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray.
5. Sprinkle 1/2 of an 8-ounce bag of English Toffee Bits and press slightly whit the back of your spoon.
6. Cool. Cut into 2-inch squares. Best if served the same day.
MICROWAVE DIRECTIONS:
In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow steps 2 and 3 above. Microwave cooking times may vary.
