My Dad has been making these New England favorites my whole life and I’ve never had another as good as his! When my parents visit us in NC, my Dad always makes these and they’re one of my son Nate’s favorite things to eat! Hope you’re family will enjoy them, too!

2 c. King Arthur’s unbleached all-purpose flour

2 tbsp. baking powder

Salt to taste

Black pepper to taste

4 cans of Snow’s minced clams with juice

A 48-oz bottle of canola oil

Mix the flour, baking powder, salt and pepper.  Add clams and juice from the cans. You may need to buy a bottle of Snow’s clam juice, but the juice in the can is usually sufficient.   I watched my Dad as he made the batter and saw the bubbles form from the baking powder. The batter should not be too wet and not too dry. Do not overmix.

Heat the oil in a medium sized saucepan. Put enough oil to go 2/3 of the way up the pan. Be careful not to put too much. Drop the clam cake batter by the spoonfuls and turn once browned. Place some paper towels in a basket and place the clam cakes inside when finished.

Tip: You can always add, but you can’t take away, so our advice is to put a little salt and pepper in your batter and then make a small clam cake to taste. You can always add if you need more!
