So far all of my blogger buddies participating in this years Comfort Foods Feast with the Food Network have shared our favorite comfort recipes for pot pies and potatoes. Today we are all sharing our favorite recipes for chocolate chip cookies!
Okay, so I adore chocolate chip cookies! Everyone who knows me knows that this is my all-time favorite cookie! So, you can imagine my delight when I saw chocolate chip cookie recipe requests in this week’s Food Network’s Comfort Foods Feast!
Drum roll please… Allow me to introduce you to my Colossal Chocolate Chippers! These is my all-time favorite chocolate chip cookie recipe — hands down!
Santa was a very happy boy when he arrived at our home to find a warm fire, a cold glass of organic milk and my colossal chocolate chippers on a shiny red plate waiting for him!
If I were a betting woman, I’d bet that Santa’s all-time favorite cookie this year was mine! I wonder if he sent Mrs. Clause to my site so that she could make them for him throughout the other eleven months of the year. That would certainly help him keep his hug-able Santa figure! Or perhaps he’s made a batch himself for the hard-working elves.
But wait! I’m not done. Being the chocolate chip cookie connoisseur that I am I have other ideas for you, but first some cookie baking tips from my cookbook, You Never Cook Alone:
COOKIE BAKING TIPS
1. Are your cookies coming out hard and dry? Try substituting half of the granulated sugar in your recipe with brown sugar. Unlike regular sugar, brown sugar contains both glucose and fructose, which pulls moisture from the air, even after the cookies have been baked. The result is cookies that are not only moist and chewy, but deeper in color and flavor.
2. Take your cookies out of the oven before they are finished baking all the way. They should be just a touch undercooked. Cookies continue to harden once they are removed from the oven.
3. We unfortunately never have trouble keeping our cookies fresh because we eat them way too quickly, but if you do manage to store your cookies, place them in a container or freezer bag with a piece of sliced bread to keep them fresh! Change the bread slice every couple of days.
4. Always preheat your oven before baking your cookies unless otherwise stated.
Cast Iron Skillets
Have you ever tried making my Skillet Chocolate Chip Cookie? Oh, what that cast iron pan did for that cookie – sinfully comforting and delicious!
We served our skillet cookie with a scoop of our favorite vanilla bean ice cream – divine!
I love a nice scoop of ice cream sandwiched between two outrageously delicious chocolate chip cookies, too!

Chocolate Dipped Cookies

Somethin’ Special
A nice thing to do for someone special is to jar up the dry ingredients in your favorite chocolate chip recipe and give it to a friend like I did here.
Attach the recipe so your friend will know what wet ingredients to add and be sure to include instructions and any tips you may have.
I recently thought of making a whole wheat chocolate chip cookie dough and then found a great recipe over at Orangette! Amazing!
Mini Muffin Pans
I love using my mini muffin pan to create unique desserts using cookie doughs. One of my favorites I found over at Kevin and Amanda’s. It’s their sinful Chocolate Chip Lava Cups! Yes, you heard right and they are so easy to put together! I think a peanut butter/chocolate filling would, well, be the bomb as well! Can I get a witness?
