• 8 eggs
  • 1 tablespoon heavy cream
  • 1/2 teaspoon Slap ya Mama or salt and pepper
  • Non-stick butter spray or a knob of butter
  • 1/4 cup diced tomato
  • 1/4 cup diced green or red bell peppers
  • 1/4 cup diced red onion

Making the perfect is not as intimidating as some might think. Just a few tips will insure that you, your family and friends will enjoy a flavorful, fluffy, no-stick to the pan and perfectly cooked omelet. Omelets are great fun for the whole family because you can virtually do anything to them. Add your favorite cheese(s), sauteed mushrooms, tomato, bell peppers, add your favorite meats like sausage, bacon and/or ham to the omelet or throw in your favorite fresh chopped herbs.

Tip #1: I like use two eggs per person, unless we’re very hungry or I am making it for dinner in which case three is a good number.
Tip #2: I like to add a tablespoon of heavy cream which promises a very fluffy product, but please don’t run out to teh store if you don’t have cream. An omelet can be without it.
Tip #3: Season your egg mixture well with salt and pepper, Slap Ya Mama, or your favorite seasoning. Fresh herbs add lots of wonderful flavor, too!
Tip #4: Non-stick butter flavored cooking spray or a pat of butter and a non-stick pan help to insure that you will not be fighting with your omelet, but easily moving it around and folding it at the very end.
Tip #5: Always cook your omelets on medium heat. Once your pan is warm, add your butter or spray and then your egg mixture. Slow cooking eggs is always best because protein toughens up quickly. We want to end up with a nice fluffy omelet.
Tip #6: Within the first thirty seconds you can use a spatula to move the eggs around a bit and then leave it to form a circle again. You can lift a little bit of the side to let the egg run under the omelet and cook through.
Tip #7: Add whatever filling you’d like and fold half the omelet over. Allow to cook thirty seconds more. Do not let your egg overcook. A nice runny, not raw, omelet is perfect. If you are adding a filling and aren’t using leftover meats and veggies, cook the ingredients in the same pan and then use that pan to make your omelet adding tremendous flavor!

Here’s a very helpful video of one my heroes, Jamie Oliver, making a delicious omelet.

Spray a non-stick pan with butter flavored cooking spray and saute tomato, peppers and onion for about three minutes. I enjoy eating an omelet that has a little texture to it, so I do not overcook the veggies. Adding crispy bacon is the perfect compliment to any omelet as well because of taste and texture it adds.

Once the veggies are cooked to your likeness, remove them onto a late and set aside while you make your omelets.

Spray the pan again or add a little extra butter and/or oil. Just be sure that your pan is coated well enough. Heat up your pan to medium heat. You do not need lots of oil or butter just enough to coat the bottom of your pan. Add your egg mixture, and using a spatula, move the eggs around within the first thirty seconds then allow the mixture to form a circle again. Lift up the side of the egg a bit allowing the egg to run underneath your omelet.

Add your filling and cheese and fold over. Cook another thirty seconds or so. Enjoy!
