For me certain smells bring back treasured memories like the smell of my children while they were little after a bath, my husband’s clothes as I take them out of the dryer, working in the garden in the spring and the smell of freshly baked bread! I love this Multigrain bread because it’s good for my family and it’s packed with flavor…my house becomes more warm and inviting, too!

2 c. warm water (between 105F and 115F)
2 tbsp. dry active yeast
2 tsp. granulated sugar
2 tbsp. olive or canola oil
1 c. rolled oats, broken down in your food processor to coarse crumbs
2 c. King Arthur whole wheat flour
3 to 4 c. King Arthur unbleached all-purpose flour
1 tsp. kosher salt

Combine yeast, sugar and water and dissolve. Let rest for five minutes until yest proofs and is ready to go to work for you!

In a large bowl, combine oats, whole wheat four, unbleached flour and salt. combine. Add yeast mixture and oil. Mix. Flour your counter or board adn knead your dough until soft. Place your dough bake in the large bowl and cover with a dishtowel. let your dough rise in a draft-free place until it doubles in size. I like to make an X mark before it rises. Once your dough has risen, carefully place on baking stone. Cover once more and let rise a few minutes more.

Bake in a preheated 425F oven for twenty minutes or until it sounds hollow hen tapped. Enjoy!
