- 2 pounds cod fillets, or your favorite fish, cut into large pieces
- Zest of two limes
- Juice of both limes (approximately 1/4 cup)
- 4 cloves garlic
- 2 teaspoons Gourmet Garden Cilantro or 1/4 cup freshly chopped cilantro
- 1 teaspoon kosher salt
- 1/4 cup olive oil

Cod is known for promoting your cardiovascular health because it is a good source of blood-thinning omega-3 fatty acids. Cod is also a good source of vitamin B12 and a vitamin B6. Both vitamins are needed to keep homocysteine levels low. Homocysteine is a dangerous molecule that is damaging to blood vessel walls, and high levels of homocysteine are associated with an increased risk of heart attack and stroke. Cod is also a very good source of niacin, another B vitamin that is often used to lower high cholesterol levels, something else that can lead to heart disease.
Preheat your oven to 425 degrees. Place the zest and juice of the limes, the garlic, oil and salt in a baking dish. Place your fish in the baking dish and coat with marinade. Bake, uncovered, for about 10 minutes.
