I thought I wasn’t fond of Ginger Cookies until I made this recipe! Gather your family in the kitchen and make them together! Your house is about to smell terrific! Make someone’s day and pass them along! Enjoy!


2 1/4 cup unbleached all-purpose flour
3 teaspoons ground ginger
1 teaspoon baking soda
1 teaspoon ground ground cinnamon
1 teaspoon ground ground cloves
1/2 teaspoon freshly ground nutmeg
1/4 teaspoon ground mace
3/4 cup Land o Lakes salted butter, softened at room temperature
1 cup granulated sugar
1 large egg
1/4 cup molasses
1/2 cup raw or turbinado sugar

2 tablespoons candied ginger, diced, optional

In a bowl combine flour, ginger, baking soda, cinnamon and candied ginger. Set aside.

In a large mixer beat and sugar for a minute until fluffy. Add egg and molasses; beat well. Stir dry ingredients in the mixture.

Shape dough into 1 1/2-inch balls. Roll and coat in raw sugar. Place onto an ungreased cookie stone or sheet about 2 1/2 inches apart. They are fairly large cookies and will spread out quite a bit.

Bake in a 350 degree oven about 10 minutes or until lightly browned. It is important to not over bake your cookies. Everyone asks me how my cookies come out so nice on the outside and not overcooked and hard on the inside. You must try to not over bake them. When cookies come out of the oven, they will continue to harden. Let them sit on the stone for about 2 minutes and then you may transfer them onto a wire rack. If your cookies are a bit puffy when you remove them from the oven, just push down on them ever so slightly using a spatula.

You’ll just love these cookies especially this time of the year. They make wonderful Christmas gifts, too! Wrap them up on a simple plate with plastic wrap and a ribbon, in a tin, or special container and include a hand written recipe card. Your family and friends will appreciate it so much!
