I absolutely ADORE blueberry pancakes! We enjoy these delicious pancakes dinner during the summer months!

1 egg

2 tbsp. olive oil

2 tbsp. raw honey or agave nectar

1.5 c. buttermilk

1/2 tsp. pure vanilla extract

1-1/2 c. King Arthur unbleached all-purpose flour

2 tsp. baking powder

1 tsp. baking soda

½ tsp. salt

1 tbsp. water

Fresh Blueberries

Combine the egg, butter, honey , and buttermilk. Add dry and wet ingredients together. Mix well.  Add one tablespoon of water. Let sit for five minutes while you make the Maple Butter Syrup.

Heat up pan to med/hi. Coat pan with non-stick cooking spray.  Pour small amounts of batter and place blueberries on top. Cook one side until little bubbles form turning over to complete the cooking process. When my chidlren were young, we used to form our pancakes into little people, just like Laura Ingalls Wilder, author of the Little House series did with her mom!

Outrageous Maple Butter Syrup

1 c. pure maple syrup

1 stick of salted butter

In a saucepan over medium heat, melt butter in maple syrup. Serve warm over pancakes, waffles, desserts, or poached fruit. Enjoy!
