This is probably one of my favorite cakes.

Preheat oven to 350 degrees. Coat a 9 x 13-in baking pan with nonstick cooking spray. You can also make two apple breads in two loaf pans. May need to cook 5 minutes more.

For the cake:

Cream together:

1 c. light brown sugar

1 c. granulated sugar

1.5 c. canola oil

Add 3 large eggs, one at a time.

In a separate bowl combine:

3 c. King Arthur unbleached all-purpose flour

1 tsp. baking soda

1 tsp. salt

2 tsp. ground cinnamon

¼ tsp. ground nutmeg

1/2 tsp. ground ginger

1/4 tsp. ground allspice

1/4 tsp. ground cloves

Add to wet ingredients and mix well.

Fold in:

5 medium apples peeled, cored and chopped

1 tablespoon pure vanilla extract

1 c. chopped nuts, optional

Bake for 55 minutes or until toothpick inserted in center comes out clean.

Make the icing while cake is baking.

In a saucepan over medium heat, bring the following ingredients to a boil, stirring constantly:

1 c. light brown sugar

1/2 c. unsalted butter

1/4 c. evaporated milk

1 tsp. pure vanilla extract

1/4 tsp. salt

Once mixture starts to boil, immediately remove from the heat and stir in vanilla extract and salt. When the cake comes out of the oven, I poke holes in it using a chopstick. Pour the icing over the top and watch the cake soak it up! Absolutely indescribable!!!
