Ah, Mike and I awoke to a cool Sunday morning; fall is here we proclaimed! This morning it is a beautiful 74 degrees in Raleigh, North Carolina, so Mike and I decided to enjoy our breakfast on our screened in porch. The smell of fall was in the air! Opened windows encouraged the beautiful, cool fall air to come into our home and greet us in our keeping room where we prepared breakfast together while we listened to happy birds welcome the fall air and the sound of piano music quietly playing in the background.
Mike and I began to make breakfast together. I prepared the turkey bacon as Mike began peeling and grating two b-e-a-u-t-i-ful russet potatoes which would ultimately become our golden and delicious hash browns. Once everything was almost ready, I prepared our eggs. You never want your eggs to sit because they will continue to cook and become congealed…yuck! “Low and slow” and then eaten immediately is always best!
Ahh, the smell of a good wholesome breakfast with your loved ones on a cool, Sunday morning! Who could ask for more?

Golden Hash Browns
Simple, golden hash browns make any ordinary breakfast extraordinary!
Serves 4 or 2 very hungry people …
2 russet potatoes, grated
1 small yellow onion, grated
Salt and pepper to taste
1 tbsp. olive oil
1 tbsp. butter
Using your food processor with your shredder attachment grate your onion. If you do not have a food processor you can always use a hand grater. A food processor was one of the best kitchen investments we ever made! Now grate the two potatoes. Season with salt and pepper, or in our case, we like to use Slap Ya Mama seasoning from Louisiana! http://slapyamama.com/
Heat your pan (nonstick is always best for something like this) over medium high heat. Add your olive oil and butter. Place your grated onion and potatoes in the pan. Press a bit so that you end up with a nice, golden potato pancake.
Brown one side for about 5 minutes or until golden brown. Carefully invert using a plate (protect your hands with ovenmitts) and brown the other side another 5 minutes or until golden browned! Bon Appetit!
