One of my husband’s favorite meals, this recipe is easy and filling. Because it is so filling, we enjoy this with a simple side salad.
4 green bell peppers (you can also use yellow, red or purple)
1 lb. lean ground turkey (I use 7 % fat)
2 eggs
1 tbsp. onion powder
1 tbsp. Worcestershire sauce
2 tsp. light soy sauce
1 tsp. salt
1 tbsp. ketchup
½ tsp. pepper
3 c. cooked rice, cooled
Ketchup or chili sauce for top of peppers
Cut tops of green bell peppers and remove all seeds and ribs.
In a bowl combine, ground turkey, eggs, onion or onion powder, soy sauce, salt, ketchup, pepper and rice. Place bell peppers in baking dish and divide filling equally between bell peppers without over packing. Squeeze a little ketchup over top of your turkey filling.
Bake uncovered in a 350 F oven for one hour. Enjoy!
